Lotus Root Soup Recipe

I have frequent and fond memories from childhood of my grandmother preparing lotus root soup, the dish that my family often enjoyed. Lotus root soup with pork ribs received some international fame when it was revealed that it is the favorite dish of the protagonist in “The Untamed”, a well-known Chinese drama on Netflix. The warm, comforting soup and flavorful lotus root makes this dish a favorite of mine as well. Please enjoy this simple and delicious recipe.

Ingredients (Serves 1)

 

  • 1 segment lotus root
  • 100g raw peanuts
  • 1 clove of ginger sliced into thin pieces
  • 100g pork ribs
  • 4 pitted dried red dates
    • If there’s no red dates available, dried figs are okay as well.
  • 1000cc water
  • 2 dried squid

 

Steps:

  1. Wash and skin lotus root. Make sure to thoroughly wash dirt from the holes and spaces inside the root. If there’s mud or debris inside the holes use a chopstick to clean it out.
  2. Chop lotus root into thicker chunks.
  3. Blanch pork ribs in boiling water until the raw pork changes color.
  4. Add all ingredients into pot of water.
  5. Bring water to boil, then turn to lowest heat. Simmer for at least 2 to 2.5 hours. Add salt to taste as soup is simmering, recommended to keep sodium lower because of the dried squid.
