Potato Latkes

These potato pancakes are a traditional Jewish recipe. They are often made during the Jewish holiday: Hanukkah. They’re meant to remind Jews of the miracle of the oil associated with Hanukkah.

 

Ingredients  Makes 36 pancakes

2 large potatoes

1 large onion

2 large eggs

100cc flour

2 teaspoons salt

1 teaspoon baking powder

½ teaspoon black pepper

Safflower or other oil

 

  1. Grate the potatoes and onion. Move the mixture to a clean dish towel and squeeze out the liquid.
  2. Transfer it to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix.
  3. In a pan on medium heat, pour in about 1/4 inch of oil.
  4. Put a large tablespoon of batter into the pan. Use a spatula to flatten the drops. When the edges of the latkes are brown, about 5 minutes, flip. Cook until the second side is browned, about another 5 minutes.
  5. Move the latkes to a paper towel and add salt while still warm.
